Pimento Cheese Spread
- 8 oz package cream cheese, softened to room temperature
- 8 oz sharp cheddar cheese, shredded
- 8 oz mild cheddar cheese, shredded
- 1/2 cup mayonnaise
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground cayenne pepper
- 1/4 teaspoon onion powder
- 1 jalapeno pepper, seeded and minced (optional)
- 1 (4 oz) jar diced pimentos, drained
- salt and black pepper to taste
Combined all ingredients and mix until thoroughly combined, either by hand or with mixer on medium (with paddle if possible.) Season to taste with salt and black pepper.

Notes:
If you want to eat this right out of the fridge, it's kinda hard to spread. You need to let it sit for a 5-10 minutes to soften up a little. Next time I make this I'm going to try using the whipped cream cheese instead of the block.
