Earthquake Cake

8 oz bag coconut
8-10 oz chopped pecans
German or Swiss Chocolate cake mix
8 oz cream cheese, softened
1 lb. box confectioners’ sugar
1 stick margarine or butter, melted


Preheat oven to 350º. Spray a sheet cake pan (9×13) with Pam. Sprinkle bottom of pan with coconut until the entire bottom of pan is covered. Sprinkle pecans over coconut until pan is covered.

Prepare cake mix according to directions. Pour over pecans. Mix cream cheese, confectioners’ sugar, and butter together, and carefully spoon over cake mix – does not have to be perfect.

Bake approximately 1 hour or until toothpick inserted in center comes out clean.
